etesync is e2e and has FOSS clients on various platforms (etesync app+etar on android, etesync-dav+thunderbird on linux desktop). Costs about $2/mo. Also syncs contacts and todo lists.

Maybe orgmode? syncthing+orgzly on Android, syncthing+emacs on linux desktop.
