A really fun salsa based on Meyer lemons.  It gets Rick's stamp of approval.

Comments:*I use a mandoline slicer to cut the lemon very thin and then chop the slices into smaller pieces.* The original recipe starts with 1/2 a Meyer lemon. I use a full lemon and double the rest of the ingredients.* In my opinion, the recipe has too much oil.  I mix the other ingredients then add oil to get the desired consistency.
