Mashed Potatoes with Bacon and Garlic

Bacon garlic mashed potatoes are made from scratch using simple ingredients, and ready in about 30 minutes. Creamy mashed potatoes are filled with crunchy bacon and garlic-infused butter.

Preparation:

Peel and quarter potatoes to same size. Place potatoes in a large pot; cover with water and a dash of salt. Over medium-high heat, bring to boil.

Reduce to medium heat, and simmer for about 15-20 mins., or until potatoes fall apart easily when pierced with a fork. Drain into a colander.

Return empty pan to stove and, over medium heat, add butter. Once butter is melted, add garlic and sauté for 1 min. or until garlic begins to lightly brown. Remove from heat.

Add milk to pan; allow to warm up for a moment.

Add potatoes back. Using a potato masher, slowly mash potatoes and butter mixture together, until incorporated with no lumps remaining. (Be sure not to overmix; this causes potatoes to become gluey.) Add more milk as needed to reach desired consistency.

Stir in chopped bacon and pepper. Taste potatoes; optionally, add salt to taste.


Cook's Notes:

Equipment needed: Large pot, chef's knife, cutting board, measuring cups, colander, potato masher.

Dish will keep 3-5 days refrigerated in a tightly sealed container. Reheats well.


1 Yukon Gold potatoes are excellent for mashing. Russets also work, but can become gluey if overmixed.

2 Cups, tablespoons, and teaspoons are as defined in US Customary Units, not to be confused with differing British imperial, "legal", "coffee", Commonwealth of Nations, Canadian, Latin American, Japanese, Russian, or Dutch defintions — further proof that everyone needs the metric system.

3 Unsalted butter is best, here, because the bacon will provide significant salt, already.

4 Fresh minced garlic adds the ideal flavour, but ½ tsp. garlic powder will do in a pinch.

5 For richer, creamier texture, substitute heavy cream. Almost any dairy or dairy-like product including sour cream, unflavoured almond milk, soy milk, yogurt, etc. will also do.
