Sure.  I've done this in the past for lists.linuxgazette.net .

I support the idea of the lists subdomain, irrespective of hosting. 
It solves lots of problems.

Subdomain delegation, sure, though that's probably solving a really rare
problem.

If you want to rehost the sf-lug mailing list, I'll of course be happy
to coordinate and get you full mailing list metadata on top of the mbox
and roster updates already automatically backed up offlist.

I'm also fine with continuing to do the hosting.

IMO, you're in for a world of problems if you do that.  On the svlug.org
host, a couple of past SVLUG presidents left office (one of them
quitting just before he would have been removed by referendum) leaving
behind an absurd number of mailing list subscriptions and social media
notifications raining onto the lists.svlug.org aka svlug.org host.  It
took years of cleanup.

People already have mail, elsewhere.  What problem worth addressing
would this solve?  But if you think it's worthwhile, go for it.  Just
realise that you'll be doing the cleanup.  ;->
