Author's Notes: There are a couple options, when it comes to mashing bananas. If you prefer smooth consistency, I'd suggest pureeing them. I prefer half pureed / half small bits; thus, I mash with a fork. I use 3-4 medium bananas, because it makes for extremely moist bread.
