It’s a delicious and light noodle dish with mixed vegetable; tossed with chicken and served with a classic Japanese condiment…Ponzu sauce. Ponzu is a citrus-based sauce with a tart-tangy flavor like a vinaigrette. Begin by bringing a large pot of water to a boil and cook soba noodles according to instructions. Drain and add some olive oil to cooked noodles. Lightly toss to loosen noodles. Set it aside. For the Ponzu sauce, whisk together lemon juice, soy sauce, rice vinegar and olive oil in a small bowl. Taste to adjust ingredient accordingly and set it aside. Cut up chicken, green onions, bell peppers, carrots, and cabbage (cabbage should be roughly chopped, into bite-size pieces). In either a skillet or a wok, add a glug of olive oil, a portion of the Ponzu sauce and over medium-high heat, stir in chicken pieces and sauté for 4-6 minutes. Set it aside. Add additional olive oil to the skillet and quickly sauté green onions, garlic, and ginger. Stir in carrots and bell peppers and cook for a few minutes. Add cabbage and cook for a bit longer. Add drained soba noodles along with cooked chicken, toss with remaining Ponzu sauce and serve immediately. Eat well and live life abundantly!
