In addition to Michael's comment, I agree with the approach. You
could start with something like Ubuntu Minimal (~10MB ISO), and
install only the things you feel are necessary. Meta-packages like
ubuntu-desktop pull in all sorts of stuff you may not need, like
OpenOffice, Pidgin, etc.

However, you can follow some of the suggestions used here:

And as always, you can roll you own if you like. Linux is free and
open -- you have the power. If you don't need a GUI and YouTube, your
kernel+gnubase+bash+lynx+mutt could be all you need to make the most
of a "lean PC"...
