Just came across this article, which makes interesting reading:

Talks about setting up Edubuntu server as a Linux Terminal Server (seems
to be pretty straightforward) and then having the clients connect/boot
over the network. A lot less maintenance (only one machine to backup),
and potentially easily expandable to additional clients. However, this
may be the deal breaker for us:

"For up to 10 clients, and modest services, use a recent desktop PC with
1GB of RAM and an extra NIC."

Not sure if there's a machine that would qualify for these specs. It
might be possible to move some RAM around in some of the machines that
are on site, but in any case, something to think about/test and/or
discuss. 

There's always the option of doing a straight install on each machine if
that's the way we'd rather go, or if this type of "server class" machine
isn't available.
