It being Oktober I will bring das Sauerkraut.
Many Americans have two misconceptions:
Oktoberfest actually starts in September and typically ends on the first Sunday of Oktober that Sunday is the 1st or 2nd of Oktober.
Most people do not understand that making sauerkraut is a preserving process. My ancestors chopped up cabbage and added much salt so it wouldn't spoil and they would have something to eat in the winter. We forget that frozen food has only been around for about a hundred years. Canning was developed in the 1800's because Napoleon needed ways to store food for his troops. Shipping fresh produce from South America or New Zealand is very new. I remember when the produce department was rather bleak in January.
Back to preparing sauerkrayt. As an analogy, suppose you had a can of green beans. You could just open the can, warm it up and put it on your plate. It would taste much better if you did more. I like butter and lemon juice. Ranch dressing is another choice. A friend said he liked pineapple juice on his beans.
Similarly, preparing sauerkraut starts with draining the brine and rinsing the excess salt.
Maybe Christian will come and we can discuss the fine points.
